When I tell someone "Love is the secret to my barbecue," I am thinking of the fabulous friendships I have made in the BBQ com- munity and the willingness of those friends to share their passion for cooking with me. Sharing the love makes it stronger.

To me "Love" within the context of BBQ means "passion". Which implies that you are going to give the best efforts in selecting your meats and ingredients and in preparing and cooking (smok- ing/grilling) so that the end result is delectable, delicious BBQ.

Well if we were discussing Baking, "Love" would automatically be paired with "Lard;" case closed. But, since we are talking about Love being the secret to (my) BBQ is the willingness to get my hands and fingernails dirty first with charcoal dust and later with meat preparation and the greasy cleanup that follows. Love is also the patience shown by being willing to spend the better part of an afternoon watching over and waiting to (temp) out your Meats. Is having a half dozen Pints of your favorite Ale on hand considered "Cheating?"

What is it about Barbecue that is not to love? Cooking over a wood fire, igniting the fumes of fancy. When the weather is at its yearly best, skies of blue, is when I think of you, Barbecue. Sur- rounded by good friends. The expectation of smoky, tender, deli- cious Barbecue on the lips. A favorite beverage close at hand

I think chefs say it for five reasons: (1) they really love what they
are doing, (2) they really love their own food, (3) they think they love their customers (but really it is love/hate), (4) everyone says it, even fast food cooks, and (5) it is good marketing. Now this may seem cynical, but if you add them all up, there is a serious form of love operating here. Not like marital love, not like parental love, not even like fraternal love. I suppose it is a form of service love, love of being of service, or helping others. I think we all understand that feeding others is love and the second most in- timate act. We need a name for it.

It is true that to be a really good cook one needs to enjoy cooking and even “love” creating good food. But saying that love is the se- cret of one’s barbecue is a variation of the old claim, “If I were to tell you the ingredients of my barbecue sauce, then I would have to kill you!” It is an ego driven exaggeration.

I believe the passion that you have for your cooking shows up in your final product. I have same passion for judging as I do com- peting. You get out of what you put into it whether it’s cooking or judging. I’m always a student of bbq trying to learn new tech- niques and taste profiles. We judged SCA the last few years and I’ve gotten into cooking on PK grills. In other words you have to let your love for what you’re doing show up in your product. I love
