after hours which happened quite a bit. As you drove along Livingston Avenue and looked at the set up you witnessed straight lines with spa- cious walkways. This type of organi- zation doesn’t just happen but takes a team who knows it’s the lit- tle details which make a huge dif- ference.
SCA Reps and Judges
Without our reps and judges from
around the world the SCA would
not be one of the fastest growing
food sport sanctioning bodies it is.
Having such a diverse judging pool
kept the competitors on their toes
in flavor tweaking because some
were used to cooking in their region
and learning the flavor profiles
which won. Many wondered about
what Texas judges liked only to be
reminded the judges were from
around the world, which proved to
be a great blend on the judge’s ta-
bles. No one region dominated any
table making for as fair a judging as
one could hope for. Michelle Dang
was instrumental in keeping this all
organized and the judges were
ready, no wonder she was 2019 SCA
Rep of the Year award. But these judges weren’t just interested in judging the steaks but making sure each competitor was able to get their offering in on time and in the right door. As each steak cook ap- proached the door, you would hear a judge holler out, “What color?” referencing the different groups which was needed for such a large cook of about 300 teams.
To judge this many steaks is quite an undertaking and our SCA judges were up for this task. With so much on the line they took their role in the world championships serious as they should. To say thank you to all the judges just doesn’t seem like enough for all they do and for the World Championships they did a lot without a hitch.

Walking around the Will Rogers Memorial facility one could not miss the vendors some of whom have been with SCA as sponsors from the very begin- ning. ACE Hardware had a great display filled with different grills showing why their local stores are fast becoming the outdoor cooking headquarters. Thursday night at the welcome reception they an-
nounced they would continue as the points chase sponsor for 2020 which was met with lots of cheers. Another sponsor we are so very thankful for is Grill Grates who has been with the SCA since the incep- tion. Brad Barrett and his team are always there to make sure the steak cooks have all they need all year. Although in the SCA you can cook a steak on any heat source all the competitors seem to love cooking those steaks over a charcoal fuel fire and this is where B&B Charcoal has come in as the official charcoal of the SCA. Each competitor at the World Championships was able to go up to the B&B booth and get a bag as they needed. Trimming steaks has almost become an art form as the cooks trim with surgeon like precision. This is why champi- ons and non-champions alike are using Gunter Wilhelm knives, which is the official cutlery of the SCA. How can you come to a SCA event without hearing PK Grills over and over? The reason many of the steak cooks love this grill, besides how well it cooks a steak, is in the name ‘Portable.’
Many other sponsors such as Pit Barrell Cookers have set bounties if you win a competition on their cooker which many are trying. To know when to turn in at the right temperature you need a reliable thermometer and Maverick is there for you so the steak is a perfect medium when turned in. Without our SCA sponsors there would not have been such a successful World Championship and for each of you we are extremely thankful.
Competitors
Can you imagine 300 competitors with one goal in mind, a ring and the title of World Champion? This is exactly what you had when you attended the SCA World Championship this past October. With teams literally from around the world, when you win this title in the SCA you know you have become the best steak cooker of the year with all its prestige. Teams traveled from 4 separate continents to be in Ft. Worth. Our international teams have taken the SCA to heights Brett and Ken could have only dreamed of. The countries of Japan, New Zealand, Australia, Germany, Austria, Netherlands and Canada all showed up with great fan fair and excitement antic- ipating great finishes which some received. Watch-
