that sub-chapter with A Dozen Other Barbecued Brisket Riffs. From there she goes into all the other great Texas beef dishes - Cerveza-Soaked Fajitas, Dino Short Ribs, Del Rio Cachete Barbacoa, Peppered Beef Tenderloin with Jalapeno Bernaise, and more.
Since beef is king in Texas barbecue but not to where the rest are excluded, there are offerings for seafood (the appe- tizer Smoked Catfish Spread stood out) and pork (Pork Belly Burnt Ends with Jalapeno Jelly Glaze wasn’t the only one but it is the one I’m trying next). Back to those Tex- Mex influences, there’s Cabrito Verde (don’t knock goat until you’ve tried it). There’s also a section of poultry but when I think of Texas barbecue in the bird category, there’s one must and of course she included it in the book - Barbe- cued Peppered Turkey Breast. There are also excellent chapters on sides (Pintos with Pico, A Mess of Collards, Red Chile-Pimento Cheese Grits) and desserts (Butter-Pecan Ice Cream, Mango-Watermelon Paletas, Buttermilk Pie).
If you’re like me, that shelf of books on Texas barbecue is getting pretty weighty. But you’ve got to add this one to it. It belongs there with the rest.
Anybody out there still working to get that beach bod even though we either can’t go to the beach right now or maybe we can but we have to stay so far apart that nobody can tell if you have a beach bod or not? For the sake of argument let’s assume you are seeking that perfect diet that will still allow you to enjoy your faves – which is smoked and grilled meats, amiright? – while dropping those pounds. If you read this space regularly then you’ve seen recommenda-
tions for books on the Keto diet, which is a low-carbohy- drate plan that is similar to the Atkins and South Beach diets. When you take a detailed look at it, you’d swear it was created by someone who loved barbecue but without the barbecue sauce, mac and cheese, most barbecue beans recipes and corn casserole, and then they skipped dessert. I did have someone challenge me on that example once, say- ing “...but it’s not barbecue without my great homemade barbecue sauce on it”, to which I replied, “If you make great barbecue you won’t need the sauce.”
But back to the topic at hand, which is a new book “Easy Everyday Keto: Healthy Kitchen Perfected Recipes” by Ali- cia A. Romano ($24.99, America’s Test Kitchen, 256 pp.). We’ve seen a lot of really good books come from this pub- lisher of late, even at a time when many other publishers are either cutting back on releases in the Barbecue/Grilling/Outdoor Cooking category or delaying release in light of the global pandemic. As with the other books from America’s Test Kitchen that we’ve reviewed here, this book is outstanding in how it covers its topic, from the wealth of full-color pictures, easy-to-follow graphic layout, very readable text and selection of recipes. The research and development that goes into the books is considerable and it shows in the pages.
This book even addresses the common low-carb diet com- plaint of being limited in foods and boring. Plenty of meats and cheeses and not much else. “Everyday Easy Keto” takes that challenge head on in the dozens of recipes offered here. But knowing the delightful readers of TNBBQN, all y’all are probably wanting to hear more about the meat and cheese recipes, right? OK, the first one that caught my eye
was the Butter-Basted Rib- eye Steak with your choice of either Coffee-Chile But- ter or Rosemary-Orange Butter. There’s also Grilled Thin-Cut Pork Chops with Spicy Barbecue Slaw, Grilled Beef and Vegetable Kababs and Grilled Chicken Thighs with Shaved Zucchini. You’ll be keeping the grill hot all week with these dishes. They’ve got you covered for seafood as well with Grilled Bacon-Wrapped Scallops with Celery Salad and Grilled Southwestern Salmon Burgers.
So there you go, the Keto diet could be the right choice for you. If so, make the right choice by picking up “Easy Everyday Keto”.
