seriously thought of and loved is important to us. We have run into several of these kids years later and they are happy to tell us thanks for feeding them and they are doing well. Here is another cool little recipe we have been cooking in our class that has become very popular. It is super simple and super delicious. You can follow our recipe or put your own twist on it for a new family and friend favorite.
Big Papa’s Special Spread
- Spray a little pam in the bottom of a half pan.
- Spread 2 - 8oz packs of cream cheese in the bottom of the pan about 1⁄2-inch thick
- Take a knife and score into 1-inch squares
- Season with 1⁄2 Big Papa’s all-purpose rub and 1⁄2 Big Papa’s Honeymoon rub
- Place into smoker at 250
degrees until cream cheese
reaches 150 degrees
- Take out of pan and put a
heavy coat of your favorite
pepper jelly or multi berry
jelly. We like to use Traffic
Jam (which we bring back
from Tennessee every year)
Put back in smoker for 45
minutes.
- Remove and cut one-inch
squares and put on crackers.
We like to add a candied
Jalapeno on top or you can
use Big Papa’s sweet and
spicy pickles for those
wanting a little less spice!
2021 was an interesting year. Things got a lot more
expensive. We were lucky most of our families and friends stayed healthy. We hope and pray for good health in 2022 and just wish for good things to happen in our country. We were raised with southern traditions like being good to folks, working hard and respecting our country and flag. We have raised our kids this way and our country needs to get back to our American roots. We all need to just keep cook- ing BBQ, feeding folks, loving and respecting each other. I think it is an easy formula.
