WELCOME to 2022 one and all. There’s a host of new and exciting challenges facing us that have a faint air of familiarity about them, but... Let us not dwell on such things, instead look to the future and draw upon the innovative, resilient, tenacious, and intelligent character traits that define Australia’s food and beverage industry.
We bring you 10 pages of trend forecasts this issue, from our annual look at Innova Market Insights’ Top 10 trends for 2022 (page 18) to food futurist Tony
Hunter’s rundown of what’s happening in food tech (page 22). Tim Laferla from Liquor Loot lets us know what to
expect with spirits (page 24) and ADM details
which ingredients will be this year’s hot items
(page 26).
Our Dairy Business feature on That’s Amore
Cheese is a case study on how passion, determination, and a lot of hard work created a powerhouse of premium Italian cheeses. That’s on page 28.
Australian Native Products has just invested $4 million in a new processing facility for its lemon myrtle crop that takes leaves from the harvester and has them processed and vacuum packed in 12 hours. It has also received organic certification, which will open up markets in the US and Europe where demand for organic produce for herbal teas is high. Read about it on page 32.
And our Cold Chain feature from page 36 is
a showcase in how the industry is pushing itself forward to better standards, for the environment and to reduce food waste.
With the supply chain and logistics sector currently under so much pressure, still it keeps moving in the right direction. May that apply to all of us this year.
Onward.
