Lemon and Garlic Chicken and Avocado Salad

INGREDIENTS
› 1 serve Lemon and Garlic Chicken (approx 120g)
› 1⁄4 avocado
› 3 cups green leaf lettuce
› 1⁄4 cucumber, sliced
› 4 cherry tomatoes, halved
› 1-2 tbsp finely sliced red onion
› 1 tbsp olive oil
› 1 squeeze lemon juice
› 1 dash salt
› 1 dash pepper

Assemble all in a bowl and top with olive oil. Season with salt and pepper!

Feel free to change up the salad veggies, just keep them low carb.
Alternative to olive oil:
• 1 tbsp homemade mayonnaise or undivided food co mayonnaise
• 1 tbsp hemp seed or flaxseed oil
• 1 tbsp MCT oil
Make the olive oil into a simple French dressing if you like with vinegar and Dijon or French mustard.
Swap avocado to 30g feta if desired.
