3 DAY KICK START PLAN
Fragrant Coconut Fish with Coriander

INGREDIENTS
› 1 fillet white fish (approx 150-160g)
› 1⁄4 tsp turmeric
› 1 tbsp curry powder
› 1 tsp olive oil
› 1⁄4 onion, finely diced
› 1⁄2 chili
› 1 garlic clove, crushed
› 1 tsp fresh ginger, grated
› 1⁄2 lime
› 1 handful fresh coriander
› 1⁄4 head broccoli
› 1 bunch bok choy
› 1⁄4 can light coconut cream (approx 70mL)
BEC'S TIP & SWAPS
Cauliflower rice goes great with this dish! Add some to the meal or swap the broccoli to this if desired.
Red emperor or pink snapper are my fish of choice for this dish.

 Rub the fish with the turmeric, curry powder and salt.
STEP 2
In a frying pan, heat oil and cook onion, chili, garlic and ginger on low heat for about 5 minutes. Avoid browning.
STEP 3
Add the coconut cream, stir well, then add the fish and bring to a simmer.
STEP 4
Cook uncovered for 4 minutes.
STEP 5
Meanwhile, steam your veggies!
STEP 6
Turn fish over and finish cooking (approx another 3-4 minutes). Then, stir in some lime juice and coriander leaves and serve with the veg! Season with extra chili, salt and pepper if desired! A splash of tamari always tastes great too.
