Green Pea, Edamame & Fresh Mint Soup
Directions
Cook a few of the Edamame Beans and Peas separately  rst to add to the soup at the end.
Fry the Celery and Ginger in the cooking oil.
Add the Cinnamon and cook for a few minutes, add the Edamame Beans, Peas, Apple, Sweet Potato and half the Mint.
S r for a few minutes.
Add the vegetable stock and bring to the boil. Boil for 5 minutes, turn o  the heat and leave to cook in its own heat.
Blend, add the cooked peas, edamame beans and mint to  nish.
Check the seasoning and serve.

1 Packet or 10oz/275g Fresh or Frozen Edamame Beans
8oz/225g Fresh or Frozen Green Peas 3 S cks Celery,  nely chopped
1 Inch Ginger,  nely chopped
2 Tablespoons Cooking Oil
2 Teaspoon Cinnamon
1 Medium Sweet Potato 8oz/225g, chopped
2 Cubes Vegetable stock
Water
1 Apple, cored
2 Handfuls Fresh Mint, chopped
