  Home-made Peppermint Oreos

Recipe by
1 1/4 cup all-purpose flour
11⁄2cup dark chocolate cocoa (regular is great too!)
1⁄4 tsp baking powder 1 tsp baking soda
1 cup sugar
1⁄2 + 2T soft butter
1 egg
1⁄2 cup chocolate chips (optional)
1/4 cup butter
1/4 cup shortening
2 cups confectioner's sugar 1 1/2 tsp vanilla
1/2 tsp peppermint extract
             Instructions Preheat oven to 375 degrees 1 cookie:
Mix butter and sugar together until light and fluffy. Add egg and whip
until combinedIn a separate bowl combine cocoa, baking powder, and
2 baking soda. Whisk until combined.
3 Stir dry ingredients into wet until fully mixed.
Use a teaspoon to measure cookie dough and roll into a ball on a lined
4 baking sheet.
Bake cookies for 8-11 minutes (9 is my winning number but every oven
is different), Cool cookies completely.
1 filling:
Whip butter and shortening together until light and fluffy, slowly add
the confectioners sugar until combined, it should be fairly thick, just
2 like the good stuff in a "real" oreo :).
3 Add vanilla and peppermint to taste.
Spread filling on bottom half of cookie and sandwich.
Optional: roll the outer edge of the cookies in crushed candy canes
