               INGREDIENTS
               o  1 1/4 lbs red potatoes, washed, but not peeled
               o  1 1/4 lbs Yukon gold potatoes,washed, but not peeled
               o  1 onion, sliced thinly
               o  3 Tbsp butter
               o  3 Tbsp all purpose flour
               o  2 cloves garlic, minced
               o  1 tsp dry mustard
               o  1/4 tsp dried thyme
               o  1/4 tsp paprika
               o  salt and pepper, to taste
               o  2 cups whole milk
               o  1 cup cheddar cheese shredded
               o  1/2 cup gruyere cheeseshredded
               o  1/4 cup Parmesan cheesegrated
               o  fresh chives, for garnish
               o  fresh parsley, for garnish
               o  additional 1/4 cup cheddar cheese, shredded
