FOOD CONSERVATION

ALL entries must be preserved by the exhibitor since the last fair.

Canned entries must be in standard canning jar with lid and screw band seal. Each entry

must be marked to show contents and date canned.

Jars will not be opened for judging.

For information on safe food preservation refer to the National Center for Food
Preservation (http://nchfp.uga.edu/) or contact NC Cooperative Extension, Lee County
919-775-5624 to assist you.

Judging standards are:
Proper Container; Contents Labeled and Dated; Good Seal; Correct Fill Height; Natural
Color; Clarity; Nothing Floating; Uniformity in Pieces; Proper Canning Process; Stability;
Lack of Crystals.

Butters are pureed fruit cooked to a smooth consistency.
