Spiced Skinless Chicken Drumsticks










   INGREDIENTS

        7 Chicken Drumsticks
        1 large Onion (finely chopped)

        1 large Tomato (finely diced)
        1 tsp Chilli Powder (optional)
        1 tsp Turmeric powder

        1 tsp Coriander powder
        1 tsp Garam masala powder
        2-3 tsp Mild Nando's (mild chilli sauce)

        1 tsp Butter
        1 tsp Fresh Cream
   Marinade

        1 cup Greek Yoghurt or Light Sour
        Cream

        1 tsp Ginger and Garlic paste
        2 tsp Lemon juice
        Salt


      METHOD
       1. Put Greek yoghurt (or light sourcream) into a fine sieve over a bowl and let rest
      2. To remove the skin off the chicken - start to pull off, then use a sheet of paper towel to
      hold the skin and pull off the bone. Slit the chicken with knife around the meat in 4 places
      and put in a bowl. Add all the ingredients of the marinade over the chicken drumsticks

      and stir. (Time permitting cover with wrap and put in the fridge for 30 mins to 1 hour) Start
      Cooking Rice now if serving along side chicken.
      3. Into a pan add marinated chicken, chopped onions, finely chopped tomatoes and all
      the spice powders and gently mix. Cook it on a low heat covered for about 15 minutes
      then add Nando's Sauce. Cook for another 15 minutes covered or when the masala is

      binding well with the chicken.
      4. Finally add butter and cream give it a nice mix. Simmer till thickened and chicken is
      properly cooked - adding a little water if needed. Serve with Cooked Rice, & Freshly
      Chopped Coriander.
