P46 KITCHEN WASTE BIN AND GARBAGE/COMPACTOR ROOM (2nd Review)
RISKS
Poor waste disposal systems may leads to pest infestation and increase risk of cross- contamination.
KITCHEN WASTE BIN POLICY
a) Waste bin should be clean and in good working condition.
b) Waste bin must be covered with a bin lid at all times includes in transit.
c) All waste bins must be foot pedal operated to allow free contact between hands and bin lids.
d) Waste bin should be lined with a polythene bag.
e) Waste bin should be fitted with casters for mobility.
f) Should not be over-filled with food waste.
g) Cardboard cartons should not be thrown into waste bin.
h) Regular washing and sanitizing schedule to be in place.
GARBAGE/COMPACTOR ROOM POLICY
a) Garbage room must be clean and sanitary condition at all times.
b) Must be well lit, ventilated and properly sealed to prevent entrance of pests.
c) Washing point must be available for cleaning purposes.
d) Hand wash sink must be available outside the garbage room.
e) No presence of pest at all times.
f) Insect killing device must be available and in working condition.
g) Door or plastic curtain at entrance to garbageroom.
h) Drainage system to be clean and functional.
i) Instructional signage for proper use of compactor machine and general cleanliness of room.
j) No storage of food containers, racks or idle equipment.
