    Cleaning and Sanitizing –
Appropriate facilities and procedures shall be in place to ensure that any necessary cleaning and maintenance is carried out effectively.
   Unhygienic and dirty environment: dirty exhaust hood, ceiling, wall, floor, floor gullies, drains
Dirty ceiling or wall ventilation grills (external), air ventilation cover / diffuser
Poor condition of cleanliness of all equipment, utensils, overhead pipe/electrical wires, general cleanliness
Dirty floor, wall, ceiling, shelves and gaskets in/of fridges and freezers.

  Facilities Maintenance -
Appropriate facilities maintenance shall be in place to ensure that any necessary cleaning and maintenance is carried out effectively.
  Chipped/broken tiles; Moldy walls; Damaged door/ door frame
Dirty ceiling or wall ventilation grills (internal, filter) Rusty/broken ceiling / gaps found on ceiling
Blocked/ not covered floor drains that may allow pest harborage
Improper kitchen temperature (other than cold prep areas, e.g. cold kitchen/pastry)
Damaged kitchen equipment
Condensation inclusive of condensation in the chillers freezers where foods are covered
Damaged floor, wall and ceiling in/of fridges and freezers.
