 3 Put chicken skin side down in a hot pan with olive oil. Cook until golden and crisp and then turn. Put into the oven for 15-20 mins.
4 Put the pancetta in at the same time as the chicken.
5 For the sauce put olive oil in the pan. Add two cloves of garlic and then the mushrooms and thyme.
Leave them to sweat and add the stock cube
and the cream. Let it simmer.
6 To serve, put the potatoes on the plate. Cut the chicken in half and arrange on top of the potatoes. Spoon sauce over the top and balance the pancetta on top.
DARK CHOCOLATE AND ORANGE BROWNIE (SERVES 8)
YOU WILL NEED
Good quality dark chocolate 225g Butter 225g Sugar 300g Eggs 4 Cocoa 75g Flour 75g
Rind of large orange 1
METHOD
1 Melt together the butter and chocolate.
2 Whilst melting, whisk together the sugar and eggs until creamy in texture.
4 Add the flour and cocoa to the egg mix and fold in.
5 Finally add the chocolate and butter and the orange rind and fold in until fully mixed.
6 Bake in the oven at 180 degrees centigrade for around 30 mins until a knife comes out with a little moisture. The brownie should be semi-wobbly. This will give
a gooey finish.
7 Serve with vanilla ice cream.
