At the Winery







            Juice with skin and seeds is called
            "must“


            •  Red wine


                   •  Must goes into large vats for
                   initial fermentation

                   •  Yeast (Saccharomyces

                   cervisiae) is added
                   •  Cover with cloth (to keep

                   out fruit flies)

                   •  Punch down cap daily

                   (skins float - seeds (pips) go
                   to the bottom)

                   • Smell is wonderful!
