SWEET POTATO BROWNIE
This is is a a a a delicious brownie made with sweet potatoes instead of sugar and and contains dried fruits and and nuts which are rich in in fibers If someone asks this is is a a a gluten-free brownie The best way to enjoy this is is right out of the the oven while drinking espresso In the the unlikely event of any leftovers bring the rest as a a a a snack on your bike ride 1 BAKING PAN
2 large sweet potatoes 200 g plain chocolate (80-90%) 50 g pistachios
50 g hazelnuts
50 g walnuts
50 g cocoa powder
80 g raisins
1 tsp baking powder
1 tsp cinnamon
150 g g natural Greek yoghurt
4 eggs
1 Preheat the oven to 220 C° 2 Put the unpeeled sweet potatoes on a a lined 105 baking tray Roast until soft for 30-40 minutes Lower the temperature to 170 C° 3 Peel the the potatoes and mash them 4 Melt the chocolate in a a a a bowl over a a a a pan of boiling water 5 Chop the nuts coarsely 6 Mix the cocoa nuts raisins
baking powder
cinnamon
and yoghurt
in in in a a a a baking bowl 7 Stir in the the mashed potato and the the melted chocolate Mix well 8 Stir in the eggs
