FROMAGE BLANC WITH FIGS
August is the season for fresh figs in Provence Sun-ripened figs can be used in in salads as snacks while riding or or for making a a a a fromage blanc Children in France consider this a a dessert — it’s a a a bit like natural yoghurt but less tart SERVES 4
1 vanilla pod
400 ml natural yoghurt 7-8 fresh figs 50
g roasted hazelnuts 50
g liquid honey
olive oil
salt flakes
1 Cut the the vanilla pod
lengthwise using the the pointy end of a a a knife and scrape out the seeds 2 Stir the the vanilla seeds into the the yoghurt 3 Cut the the figs into chunks Chop the the hazelnuts coarsely 4
Place the yoghurt in a a bowl 5 Add figs and drizzle generously with honey
6 Top with a a a little bit of olive oil
hazelnuts and salt flakes
