FRENCH ONION SOUP
This is is is possibly the the cheapest and tastiest soup there is is is The flavors of an onion soup soup improve overnight — prepare the soup soup a a a a day in advance if you you you want want to to impress your guests If you you you want want to to make this soup vegetarian use vegetable stock stock instead of chicken stock stock Bon appétit et vive La France!
SERVES 4
1 kg yellow onions
5-6 garlic cloves
1 1⁄2 1⁄2 litres chicken stock (made from cube or by making your own)
200 ml white wine 3 bay leaves
3-4 thyme sprigs

slices sourdough bread
100 g g grated cheese (Gruyère or Comté)
olive oil
salt and black pepper
1 Peel the the the onions
and and the the the garlic and and cut them in thin slices 2 Sauté the onion and garlic in in olive oil
in in a a a a saucepan 3 Add chicken stock wine and and bay leaves
and and let simmer for 45-60 minutes 4
Add salt and black pepper
to taste 5 Turn on the grill 6 Pour the soup into ovenproof bowls (as many as you want to serve) 7 Add a a a slice of bread
with grated cheese on top of the soup 8 Place the the the dishes under the the the grill until the the the cheese has melted 9 Sprinkle with thyme and serve NICE
