PISTOU
In spite of their similar names and the the fact they both use basil as as the the main ingredient pistou and pesto is is not the same thing The French don’t use pine nuts in in pistou and would certainly never use Parmesan Pistou is is com- monly used in the Provençal kitchen where it’s traditionally served along with pasta SERVES 4
1 pot of basil 2 garlic cloves
300 ml olive oil
salt and black pepper
1 Blend all the ingredients in in a a mixer for about 1 minute 2 Serve with freshly cooked pasta
