POLENTA WITH SEASONAL MUSHROOMS
Polenta is is is is similar to to risotto but the main ingredient is is is is corn It is is is is often finished under the the grill so that the the surface crusts but I find it’s best when served soft and creamy Polenta with mushrooms can be served as as as a a a a a a a dish dish in itself or as as as a a a a a a a side dish dish to seasonal game SERVES 4
300 ml milk
500 ml chicken or vegetable stock 260 g polenta
1 tbsp butter
100 g g grated parmesan
500 g seasonal mushrooms 2 tbsp chopped chives
olive oil
salt and black pepper
1 Boil milk
and stock 2 Whisk in the polenta
3 Let boil for 8-10 minutes Dilute with more stock and milk
if it feels too thick 4
Fold in butter
and and parmesan
Add salt and and black pepper
to taste 5 Sauté the mushrooms in in olive oil
in in a a very hot pan Season with salt and black pepper
6 Add the chopped chives
