MUSHROOM SOUP
This is is is a a a a rich soup soup that is is is easy to make Mushroom soup soup serves great after a a a a a ride in in the the rain and the the cold A good mushroom soup can be made using both chicken and and vegetable stock and and is is nice as a a a a vegetarian dish SERVES 4
700-800 g mixed mushrooms
2 shallots
500 ml hazelnut milk
500 ml chicken or vegetable stock 1 tbsp butter
olive oil
salt and black pepper
1 Cut the mushrooms
into smaller pieces Rinse them them thoroughly if you you picked them them yourself 2 Peel the the shallots
and slice them 3 Sauté half of the the mushrooms
and the the shallots
in in olive oil
in in a a a saucepan 4
Add hazelnut milk
and stock let boil for 30 minutes 5 Blend the soup in a a a a blender Add salt and black pepper
to taste 6 Sauté the the rest of the the mushrooms
and shallots
in in a a a a a frying pan Season with salt and black pepper
7 Spoon the cooked mushrooms
into a bowl 8 Mix the the butter
into the the soup using a a hand blender to to make it it frothy Pour it it into the bowl over the mushrooms
