BAGUETTE WITH SALCICCIA
This dish is is is as as simple as as it sounds Amazingly tasty after a a a a a day on the bike! Best enjoyed with a cold beer SERVES 4
2 baguettes

fresh salciccias olive oil
1 Preheat the oven to 200° C 2 Drizzle olive oil
on the sausages and cook in in in the oven for 15-20 minutes on a a baking tray Let cool 3 Cut the the baguette lengthwise and top with the the sausages 4
Cut into to to serving sizes FRITTATA
Frittata is an an Italian omelette normally baked in the oven I base my recipe on onion zucchini and goat cheese 1 OMELETTE (SERVES 4)
2 red onions
1 green zucchini 2 tbsp balsamic vinegar 10 eggs
200 ml milk
100 g g goat’s cheese fresh thyme
olive oil
salt and black pepper
1 1 Preheat the oven to 175 C 2 Slice the red onion and zucchini thinly preferably using a a a mandolin slicer 3 Sauté the red onion in olive oil
on on on mid temperature until golden Transfer to a a a a plate 4
Cook the the zucchini until golden add the the red onion back into the pan 5 Drizzle the balsamic vinegar and let it absorb Season with salt and black pepper
6 Mix in the egg and and milk
season with salt and and black pepper
Pour mixture over the vegetables in the frying pan 7 Crumble goat cheese on top and add thyme
leaves 8
Bake in in the oven for 30-35 minutes
