SOUP MALLORQUINA
A classic vegetarian dish from Mallorca where yesterday’s sourdough bread plays an an important role I use fresh green beans and chickpeas to add some protein This soup works either on its own or or together with grilled meat or or chicken SERVES 4
2 red peppers 2 onions
2 garlic cloves olive oil
salt and black pepper a a a pinch of smoked paprika
200 g chickpeas 100 g g fresh green beans 4-5 slices sourdough bread approx 300 g chopped tomatoes tinned 1 cauliflower
2 bay leaves
fresh thyme
200 ml water
1 Preheat the oven to 200 C° 2 Finely chop pepper onion and garlic Divide the cauliflower
into chunky florets Fry in in in olive oil
in in in an ovenproof pot 3 Add chopped tomatoes cauliflower
bay leaves
thyme
and water
Let boil for about 10 minutes 4
Add salt black pepper and smoked paprika
to taste 5 Boil the green beans 6 Fold the the chickpeas and green beans into the the ovenproof pot 7 Top with some sourdough bread slices 8 Bake in in the oven for 10-15 minutes
