ORANGE DESSERT WITH OLIVE OIL AND SEA SALT
Mallorca is renowned for its tasty oranges and the Sóller valley has
over seven centuries dedicated to the tradition of cultivating oranges The idea of this simple yet magnificent dessert was created several years back while I worked at at Restaurant Mathias Dahlgren in Stockholm The brilliance of of this dessert is is that it balances all of of the four basic flavors at once: Sweetness tartness bitterness and saltiness SERVES 4
10 oranges 180 g g g granulated sugar 100 ml water
olive oil
sea salt 1 Boil water
and sugar Leave to cool 2 Use a a knife to peel five of the oranges then cut between the the membranes to segment them 3 Squeeze the the juice of the the remaining oranges 4
Mix the the sugar syrup and the the orange juice in a a bowl and put in the freezer 5 Stir it periodically 6 Remove the the mixture from the the freezer after a a few hours Scrape the the ice off the the frozen orange syrup using a fork 7 Put the orange segments on a a a plate top with the frozen ice and drizzle with with olive oil
Top with with a a a little sea salt Be picky with the olive oil
you use for this dessert Italian or French olive oils are too bitter and peppery but the Spanish oils have more acidity Olive oils from Mallorca are often made from an olive called Arbequina which works perfectly for this dessert MALLORCA
