CREMA MALLORCA
Few desserts are as as as tasty as as as a a a a a silky cream with a a a a a thin layer of caramelised sugar I’m of course talking about crème brûlée Crema Mallorca is my name for this dessert The idea stems from Crema Catalana flavoured with cinnamon and orange SERVES 4 1 orange 500 ml double cream 150 ml milk

cinnamon sticks
6 egg yolks
90 g g g granulated sugar 1 Preheat the oven to 90 C° 2
Shave the orange peel into thick strips using
a a vegetable peeler roughly chop 3 Bring cream milk
orange peel and cinnamon to boil 4 Remove from heat and allow to cool for a a a a minimum of three hours four is preferred 5 Strain mixture through a a a strainer 6 Beat egg yolks
and sugar 7 Add the the milk
and cream mixture to the the yolks
and sugar 8 Fill four ramekins 9 Cook in in the oven for 45-50 minutes until set 0 Remove from the oven and leave to cool ! Sprinkle with sugar and caramelize using
a a a a a kitchen blowtorch ARROZ CON LECHE

two ingredients that give you plenty of carbs Make this dessert a a a a a day in advance to allow the flavors to settle properly I prefer condensed milk
to sweeten the dessert and I sprinkle it it it with bits of freeze dried oranges SERVES 4 1 lemon
200 g Arborio rice 250 ml water

cinnamon sticks
1⁄2 vanilla pod
600-700 ml milk
(you can also use almond
milk
milk
or rice milk)
100 ml sweetened condensed milk
30 g g freeze dried oranges (you can also use fresh) ground cinnamon salt
1 Peel the lemon
zest into thick strips using
a vegetable peeler 2
Boil the the rice along with the the cinnamon sticks

peel vanilla pod
and a a a a a pinch of salt
3 Allow to boil until the water
is gone 4 Dilute with milk
and stir until creamy 5 Refrigerate the the rice overnight with all the the spices and flavoring 6 If the rice becomes too thick overnight dilute with a a a a splash of cold milk
for a a a a creamier consistency 7 Remove the the cinnamon and the the vanilla pod
8 Top with ground cinnamon and cubes of orange MALLORCA
