SALAD WITH BROCCOLI SERVES 4

heads of broccoli
1 cucumber
20 cherry tomatoes
1 bunch of spring onions 50 ml white wine vinegar 200 ml olive oil
salt and black pepper
1 Cut the broccoli
into florets and boil until soft in lightly salted water Chill immediately in cold water 2
Cut the tomatoes
and cucumber
into chunky pieces
3 Slice the spring onion thinly 4
Make a a dressing of white wine vinegar and olive oil
5 Mix all the vegetables and pour over the dressing 6 Season with salt and black pepper
FRUIT SALAD WITH SPICY QUARK
SERVES 4
1 pineapple
2
mangos
runny honey
digestive biscuits
a a small bunch of mint
50 g freeze dried strawberries 50 g freeze dried blueberries
1 Cut up the pineapple
and mangos
and put on a a a a plate

Drizzle with runny honey
3 Crush and sprinkle the digestive biscuits

Decorate with chopped mint
5 Top with the defrosted and dry berries SPICY QUARK
500 ml natural quark
1 tsp cinnamon
1 tsp ground cardamom zest from 1 lemon agave nectar
1 Mix the quark
spices and lemon zest 2
Season with agave nectar
for sweetness
