QUINOA SALAD WITH AVOCADO AND BEANS
SERVES 4
A lot of people choose to to be vegetarian and need to to find vegetables that have enough protein to substitute fish and meat There’s lots of protein from the vegetable kingdom in in this salad With quinoa and beans mixed with vegetables you get a a a good start to the day 200 g yellow and red cherry tomatoes 4
avocados
1 pot of parsley
400 g red quinoa 200 g boiled haricot beans 50 g raisins
juice of 2 limes
olive oil salt and black pepper
1 Cut the tomatoes and avocados
in chunky bits
2 Chop the parsley
3 Cook the quinoa 4
Mix the the quinoa beans raisins
and the the chopped parsley
with the tomatoes and avocados
5 Make a a a dressing of lime and olive oil and and pour over the salad Add salt and and black pepper
to taste
