by the organisers and I get a a a a list of names to contact to order ingredients that should be there when we arrive Most of them are nice and and helpful and and buy everything we require But sometimes there’s resistance Some of them will just say no no we’re not allowed into their kitchens It doesn’t matter how much we explain to them that it will make their job easier This mainly effects the cyclists We have a a a truck for moving bikes and other equipment and it it it does have a a a a small kitchen but it it it is of course not dimensioned for advanced cooking I can use it to make simple vegetable dishes rice and pasta The quality of the hotel kitchens also varies: everything from smart new hotels with loads of equipment to old and worn that hardly even have a a a a a a saucepan The latter buy all their food ready-made and just heat it in an an oven An ordinary competition day starts for me at 6 am Quick shower into my chef’s clothes 093 and in the kitchen at 6 30 A lot has to be done Bread scones porridge smoothies rice and pasta The cyclists have their breakfast at 8 I normally set up a a a little station next to their table with a a a a a a hotplate and a a a a a a frying pan from which I serve omelettes They can choose how many eggs they they want want and what they they want want in it I only cook for the the the cyclists in the the the team the the the rest eat the hotel’s food When breakfast is over I pack my equip- ment and carry it out to to to the car car to to to drive to to to the the next next town and the the next next hotel It can be anything between 30 minutes and 5 hours between the hotels It’s difficult to create a a larder since we change hotels almost every day We basically start from square one every day Once at the hotel I have to to quickly get out into the the kitchen if the the ingredients I ordered aren’t
