            Spiced Vinegar
Add this vinegar to vinaigrettes, sauces, or oysters .

 Steep time
   10 to 15 days
 Ingredients
• 2 cinnamon sticks
• 2 mace flowers
• 1 tbsp (15 ml) whole cloves
• 1 tbsp (15 ml) black peppercorns
• 1 tbsp (15 ml) allspice
• 2 bay leaves
• 4 dried chili peppers
• 4 cups (1 L) white or red wine vinegar
Preparation
• In a pot, combine spices, crumbled bay leaves, peppers, and vinegar .
• Heat almost to a boil and remove from heat . Do not allow mixture to boil .
• Let cool and pour into a clean, dry bottle . Seal tightly .
• Store in a cool, dry place for 10 to 15 days before using .
• Taste . If spice flavor is too strong, add more wine vinegar .
• If bottle is too small to add any additional vinegar, pour some of the steeped vinegar into another clean, dry bottle, making sure to divide spices equally before adding
extra vinegar .
