Fresh Herb Vinegar
Delicious in vinaigrettes or mayonnaise-based dressings or sauces for poached salmon, chicken, smoked pork loin, pasta, avocado, and tomatoes .

2 weeks minimum
Ingredients
• 4 cups (1 L) red or white wine vinegar
• 2 bundles of one variety of fresh herbs or a combination of roughly chopped fresh herbs (basil, mint, thyme, marjoram, oregano, etc .)
Preparation
• Wash and thoroughly dry herbs and place in a wide neck bottle .
• Pour vinegar into bottle and seal tightly .
• Store in a dark place to prevent discoloration .
• Let steep for 15 days, shaking bottle daily .
• Taste vinegar after 15 days . If the flavor of the herbs is not strong enough, filter the vinegar and steep again using fresh herbs .
• Store as is or filter again and store in a very clean bottle .
