            Citrus Vinegar
This zesty vinegar is perfect for vinaigrettes, in mayonnaise for a zippy chicken salad, or as a seasoning for seafood. Try it on a mixed salad with fruit, an endive salad with oranges or mandarins, or on celery and orange salad.

   2 weeks
• 2 lemons
• 2 limes
• 1⁄2 orange
• 1 pinch paprika • Salt and pepper
• 1 cup (250 mL) apple cider vinegar (or enough to cover)
• Zest one of the two lemons, both limes, and orange half.
• In a pot, combine zest with the juice of one lime.
• Add paprika, pepper, salt, and vinegar, stirring well.
• Heat almost to a boil and remove from heat. Do not allow mixture to boil.
• Let cool and pour into a clean, dry bottle. Seal tightly.
• Store in a warm, sunny place for 15 days, shaking bottle occasionally.
• After 15 days, filter vinegar with a sieve covered in cheesecloth and transfer to a clean, dry bottle.
• Seal tightly.
