            Red-Skinned Potato Salad
Here’s a simple creamy yet tangy potato salad, perfect for barbecues or potlucks!

 Ingredients
• 2,2 lb (1 kg) red-skinned potatoes • 4 green onions, chopped
• 1⁄3 cup (80 ml) plain yogurt
• 1⁄3 cup (80 ml) mayonnaise
• 2 tsp (10 ml) apple cider vinegar • 1 tsp (5 ml) Dijon mustard
• 1 tsp (5 ml) salt
• 1 tsp (5 ml) curry powder
• Pepper
• 2 tbsp (30 ml) fresh parsley, chopped
Preparation
• Boil unpeeled potatoes. Let cool; peel and cut into cubes.
• In a bowl, combine green onions, yogurt, mayonnaise, vinegar, mustard, salt, and curry powder.
• Pour dressing over potatoes, add pepper and parsley, and gently toss to coat.
