            Moroccan Salad
A salad inspired by the vibrant flavors of North Africa — tangy lemon, salty olives, and fresh parsley.

   15 minutes
 Preparation
• Soak lemons in cold, lightly salted water for 30 minutes. Remove lemons, peel, and cut in half. Squeeze and zest lemons, placing in separate bowls.
• Chop lemon zest and put in a salad bowl. Add onion, olives, parsley, paprika, cumin, and vinegar. Salt to taste and mix well.
• Drizzle with olive oil and lemon juice. Toss and serve immediately.

Serves 4
• 2 lemons
• 1 small red onion, thinly sliced
• 16 green olives, pits removed
• 3 tbsp (45 ml) parsley, chopped • 1 pinch cumin
• 2 tsp (10 ml) apple cider vinegar • Salt
• 4 tbsp (60 ml) olive oil
