            Country Sausage Salad
This protein-rich salad provides energy throughout the day while still packing a flavor punch!

 Preparation
• Arrange lettuce on serving plates.
• Combine cabbage and carrots and spread over lettuce. Top with sausage and chervil.
• Mix oil, vinegar, and mustard. Salt and pepper to taste.
• Pour vinaigrette over salad and serve.
Ingredients
Serves 4
• 1 head romaine lettuce
• 1⁄4 cup (60 ml) white cabbage, grated • 1⁄4 cup (60 ml) red cabbage, grated
• 2 carrots, grated
• 1⁄3 lb (150 g) kielbasa, cubed
• 1⁄2 tsp (2,5 ml) chervil
• 5 tbsp (75 ml) sunflower oil
• 2 tbsp (30 ml) apple cider vinegar
• 1 tbsp (15 ml) Dijon mustard
• Salt and pepper
