            Creamy Yogurt Pasta Salad
Jazz up the weeknight dinner routine with this deceptively rich-tasting low-fat pasta salad.

 Ingredients
Serves 4 to 6
• 1 tsp (5 ml) Dijon mustard
• 1 tbsp (15 ml) apple cider vinegar
• Salt and pepper
• 1⁄2 cup (125 ml) plain yogurt
• 1⁄2 cup (125 ml) light mayonnaise
• 6 tbsp (90 ml) olive oil
• 2 tbsp (30 ml) each of parsley and basil, chopped
• 3 cups (750 ml) farfalle, cooked
• 1 English cucumber, diced
• 1 red pepper, diced
• 1 green pepper, diced
• 2 green onions, finely chopped
Preparation
• Combine mustard, vinegar, salt, pepper, yogurt, and mayonnaise. Add oil by pouring in a steady stream, stirring constantly.
Add fresh herbs.
• In a large salad bowl, combine pasta, cucumber, peppers, and green onions. Add vinaigrette and toss to coat.
