            Basic Vinaigrette

 Preparation
• In a bowl, combine mustard, garlic, salt, pepper, and vinegar. Pour in oil in a steady stream, whisking to form a smooth emulsion.
• Vinaigrette will keep for 1 month in the refrigerator.
Ingredients
• 1 tsp (5 ml) Dijon mustard
• 1 clove garlic, crushed
• Salt and pepper
• 1⁄4 cup (60 ml) apple cider vinegar • 3⁄4 cup (180 ml) vegetable oil
 Blue Cheese Dressing

 Ingredients
• 2⁄3 cup (160 ml) blue cheese, crumbled
• 1⁄2 cup (125 ml) sour cream
• 2 tsp (10 ml) Dijon mustard or horseradish • 1 small clove garlic, crushed
• 1 tbsp (15 ml) cider vinegar
• 1⁄2 tsp (2.5 ml) pepper
• 1 pinch salt
• 1⁄3 cup (80 ml) canola oil
Preparation
• Combine blue cheese, sour cream, mustard, garlic, vinegar, pepper, and salt. Pour in oil in a steady stream, whisking to form a smooth emulsion.
• Use as a dressing for arugula, watercress, endive, escarole, leaf lettuce, crisp romaine lettuce, or even a chunk of iceberg lettuce. It can also be used as a dip for
raw vegetables.
• For a thinner, lighter dressing, add buttermilk or milk until dressing is the desired consistency.
