            Tuna Avocado Salad
The combination of tuna and avocado is absolutely delicious — and nutritious!

   30 minutes
 Preparation
• Pour juice of 1⁄2 lemon over diced avocados and set aside.
• In a bowl, toss vegetables and juice of another 1⁄2 lemon.
• Prepare vinaigrette with oil, remaining lemon juice, vinegar, and egg white.
• Whisk together, season with salt and pepper, and add to vegetables.
• Add avocados, drained tuna, grated cheese, and nuts. Serve immediately.
Ingredients
Serves 4
• Juice of 2 lemons
• 2 avocados, diced
• 1 small cauliflower, broken into florets and blanched for 2 minutes in boiling water
• 1⁄2 cup (125 ml) mushrooms, chopped • 1 celery stalk, chopped
• 6 tbsp (90 ml) olive oil
• 2 tsp (10 ml) apple cider vinegar
• 1 egg white
• 1 can flaked tuna, drained
• 1⁄4 cup (60 ml) Gruyere cheese, grated • 12 walnuts, chopped
• Salt and pepper
