            Oysters with Fresh Cilantro and Rice Vinegar
Cilantro adds zip to fresh oysters, creating a perfect balance between East and West.
Ingredients
• 48 oysters, shucked
• 1 shallot, minced
• 1-inch piece ginger root, minced
• 1⁄2 an English cucumber, peeled and finely chopped
• 1⁄2 bunch fresh cilantro, chopped
• 1 cup (250 ml) rice wine vinegar
• Freshly ground pepper

• Combine all ingredients (except oysters) in a bowl and chill for 1 hour to allow flavors to mingle.
• Shock oysters
• Garnish oysters and serve.
 Vinegar and oysters are a natural pairing, and their flavors complement and enhance each other when properly matched. Oysters are a source of vitamins, iron, and copper, and are especially rich in iodine and vitamin B12. Depending on the size of the oysters, one serving is usually six to eight as an appetizer, or double that quantity as a main course.
