            Oysters with White Wine Vinegar and Pastis
Savour the warmth of the sun in Southern France with this Provence-inspired dish!
Ingredients
• 24 shucked oysters
• 4 tbsp (60 ml) dry white wine
• 4 tbsp (60 ml) white wine vinegar • 2 tbsp (30 ml) pastis
• 1 shallot, minced
Preparation
• Combine ingredients and spoon a small amount onto each oyster.
• Serve immediately.

 Present oysters on a bed of coarse salt spread over an attractive serving dish to prevent them from sliding around and losing any garnish!
