            Oysters with
Apple Cider Vinegar
These oysters give apple cider vinegar a well-deserved chance to shine, and will entice even the most hard-to-please palates.

   25 minutes
 Preparation
• Combine vinaigrette ingredients and let flavors blend for 25 minutes.
• While waiting for vinaigrette, add a pat of unsalted butter to each oyster and broil for 1 to 2 minutes.
• Add parsley to vinaigrette and spoon a small amount onto each oyster. Garnish with currants or grapes to add sweetness and balance the acid in the vinegar.
• Serve immediately.
Ingredients
• 12 large shucked oysters
For vinaigrette
• 1 tbsp (15 ml) apple cider vinegar • 1 tbsp (15 ml) shallots, minced
• Pinch of sugar
• Freshly ground black pepper
• A few sprigs Italian parsley, chopped
For gratin
• Unsalted butter
For garnish
• Fresh, finely chopped currants or seedless red grapes
