            Salmon with Maple Vinegar
Spoil your taste buds with a rich, warming salmon dish infused with the flavors of maple and whisky and topped with an elegant caviar garnish.

 Serves 4
For sauce
• 4 tbsp (60 ml) maple vinegar
or 3 tbsp (45 ml) white vinegar and
• 1 tbsp (15 ml) pure maple syrup
• 4 tbsp (60 ml) dry white wine
• 10 black peppercorns
• 4 tbsp (60 ml) 35% cream
• 1⁄2 cup (125 ml) cold butter
• Chopped chives
Escalopes
• 4 skinless salmon fillets
• 1 pinch salt
• 1 tbsp (15 ml) whisky (optional)
• 1 tbsp (15 ml) maple or brown sugar • 1 tbsp (15 ml) salmon or trout caviar • A few whole chives
• In a saucepan, add whole peppercorns to maple vinegar and white wine and reduce until only 2 tbsp (60 ml) remain.
• Add cream and bring to a boil. Incorporate butter by whisking small pieces into sauce one at a time until melted and sauce is completely smooth. Remove peppercorns, add chopped chives, and keep warm.
• Lightly salt fillets, brush with whisky, and sprinkle with maple or brown sugar.
• Cook in an unoiled non-stick pan for
5 minutes, turning often. Add more salt.
• Ladle a spoonful of sauce onto each plate and arrange salmon on top. Garnish with caviar and whole chives.
