            Apple Cider Vinegar Chicken with Olives
Roasting the chicken slowly allows it to soak up this intensely vibrant Mediterranean-inspired marinade.

 Ingredients
Serves 6
• 2 chicken breasts and 6 chicken thighs
• 1⁄3 cup (80 ml) apple cider vinegar
• 1 small can stewed tomatoes (398 ml)
• 2 green peppers, chopped into large pieces • 1 onion, chopped
• 1 clove garlic, minced
• 1 tsp oregano
• 1 tsp thyme
• Salt and freshly ground pepper • 1⁄3 cup (80 ml) olive oil
• 20 green olives
Preparation
• In a Dutch oven, combine chicken, vinegar, tomatoes, peppers, onion, garlic, herbs, and salt and pepper.
• Marinate for 3 hours in the refrigerator.
• Remove chicken, wipe off marinade, and brown in olive oil. Transfer back to Dutch oven.
• Add olives, cover and cook in a 350°F (180°C) oven for 1 hour.
 Chicken is an excellent source of protein, niacin, vitamin B5, iron, zinc, phosphorus, and amino acids. Cooked or raw red, yellow, or green peppers are an excellent source of vitamin C and vitamin A, and a good source of potassium. They also have vitamin B6 and folic acid. Garlic is a well-known antioxidant, and a natural source of nutrients, potassium, sulphur, and trace elements.
