Ultimate Bangers & Mash
Wild boar sausages, buttery mash and Granny’s redcurrant gravy
Make the mash potato
Preparation time approx. 10 minutes working time - 60 minutes cooking time
Ingredients required: Equipment required:
• 375g potatoes • Pre-heated oven at 180 C
o
(conventional) 190 C (fan)
o
• 90g butter
• Baking tray
• Potato ricer or sieve
• Mixing bowl
• Fork/knife
Pantry Ingredients required:
• Salt and pepper
1. Wash the potatoes scrubbing slightly but not peeling them. Prick them
with a fork or knife and then place on a baking tray and into a pre-heated
oven for 60 minutes, or until the skin is slightly crispy and the flesh is
soft. Check by sliding a knife into the potato. Whilst the potatoes are
cooking continue with the next preparation task.
2. Once done remove from oven and allow to cool for 5 minutes or until
safe to handle.
3. Place the butter into the mixing bowl with salt and pepper and then
carefully, either using a potato ricer or a sieve, pass all of the potatoes
through and into the mixing bowl leaving the skin either inside the potato
ricer or in the lining of the sieve. Once completed stir the mixture to
combine the potatoes, butter and seasoning. Taste to check the
seasoning and add more if necessary.
4. Set aside until later.
