Ingredients
Serves 4 to 6
• 19 oz can (540 ml) red kidney beans drained and rinsed
• 19 oz can (540 ml) red chickpeas drained and rinsed
• 3 tomatoes diced
• 2 cups (500 ml) fresh parsley roughly chopped
• 1⁄2 green or red pepper chopped
• 1⁄2 cup (125 ml) feta cheese cut into small cubes
• 1⁄3 cup (80 ml) red onion chopped
• Combine all ingredients Add vinaigrette and toss to to coat Lemon Dijon Vinaigrette

• 1 1 tbsp (15 ml) lemon juice
• 1⁄2 tbsp (7 5 ml) apple cider vinegar • 1⁄2 tbsp (7 5 ml) Dijon mustard
• Salt and pepper to taste
• Combine ingredients and pour over salad 20
