• 1 1 tsp (15 ml) apple cider vinegar • 1 clove garlic minced
• 1⁄2 tsp (2 5 ml) dried oregano
• 1⁄2 tsp (2 5 ml) dried thyme
• 1⁄2 tsp (2 5 ml) dried basil
• 1⁄2 tsp (2 5 ml) cayenne pepper
• Pinch of sugar
• 1⁄3 cup (80 ml) extra virgin olive oil
• 1 1⁄2 1⁄2 lb (675 g) fresh spinach washed with stems removed
• 1 medium red onion finely chopped • Salt and freshly ground pepper
• In a a a a a a food processor or or or with a a a a a a whisk blend apple cider vinegar garlic oregano
thyme
basil
cayenne pepper
and sugar
Gradually blend in the oil
• In a a a a a a a a large bowl combine spinach onion and and vinaigrette Salt and and pepper
