The combination of tuna and and avocado is absolutely delicious — and and nutritious!
Ingredients
Serves 4
• Juice of 2 lemons
• 2 avocados diced
• 1 small cauliflower broken into florets and blanched for 2 minutes in in in in boiling water
• 1⁄2 cup (125 ml) mushrooms chopped
• 1 celery stalk chopped
• 6 tbsp (90 ml) olive oil • 2 tsp (10 ml) apple cider vinegar
• 1 egg white
• 1 can flaked tuna drained
• 1⁄4 cup (60 ml) Gruyere cheese grated
• 12 walnuts chopped
• Salt and pepper

30 minutes • Pour juice of 1⁄2 lemon over diced
avocados and set aside • In a a a a bowl toss vegetables and juice of another 1⁄2 lemon • Prepare vinaigrette with oil remaining lemon juice vinegar
and egg white
• Whisk together season with salt and and pepper
and add to to vegetables • Add avocados drained
tuna grated
