Tray Baked Salmon
Tasty tray-baked salmon with roast vegetables, a delicious recipe for a quick and easy
weeknight meal for one. Just double the ingredient quantities for two people.
Ingredients Instructions
2 small baby potatoes Preheat oven to 180c. Line a baking tray with baking paper.
3 yellow (or green) courgettes In a microwave-safe bowl, with 1 tablespoon of water, prick
then cook potatoes in the microwave for 2-3 minutes. Cool
1/2 bunch of broccolini, trimmed and halved
and cut into 2mm-3mm thick slices. On the prepared tray,
(or 1 cup of broccoli florets)
place cooked potato, broccolini and courgettes.
1/2 lemon, cut into four wedges
Drizzle over olive oil and squeeze over three of the lemon
1 tablespoon pine nuts wedges. Toss to coat. Season with pepper. Bake for 10
2 teaspoons fresh dill, plus extra to garnish minutes.
(optional) Toss veges on the tray and sprinkle with pine nuts. Place
1 teaspoon olive oil salmon on top and sprinkle with dill. Return to the oven and
cook for 10 minutes more.
Cracked pepper
Serve salmon and veges with remaining lemon and garnish
100g skinless salmon fillet (deboned)
with fresh dill sprigs, if desired.
