Ingredients (yes, it's this easy):
    One box spice cake mix
    One can pure pumpkin

    Mix cake mix and pumpkin in a bowl until smooth (no need for a mixer!) Drop by rounded

    tablespoon 2 inches apart on a baking sheet lined with parchment paper or reusable baking
    mats. Bake at 350 for 13-15 minutes (edges of cookies will darken). Remove from oven, cool
    for 5 minutes on baking sheet before transferring to wire rack to cool completely.


    Mix it up:
    * Add semisweet chocolate chips, white chocolate chips, or toffee bits to this recipe.

    * Frost with store-bought frosting or make a quick cream cheese glaze (see below):

    Cream Cheese Glaze

    Ingredients:

    4 oz cream cheese
    1/4 c softened butter
    1 tsp vanilla
    1 c powdered sugar


    Instructions:

    Combine ingredients in a heat-proof bowl.
    Mix until smooth.
    Gently warm the mixture until it can be easily
    poured/spread. Drizzle over cooled cookies.

    Allow to set in the refrigerator for 10-15 minutes.


    Mix it up:
    * Add a 1/2 teaspoon (or more, to taste) of pumpkin pie spice
    * Add orange food coloring (or red + yellow)
