             Steak sauce Bordelaise


             Serves 4 | Preparation time: 15 minutes | Cooking time: 30 minutes


             What you’ll need:



             Ingredients



             For the steak

             4 x 200g sirloin steaks with a little fat

             Salt
             Freshly ground pepper
             2 Tbsp (30ml) olive oil


             For the Bordelaise sauce

             3 Tbsp (45 ml) olive oil
             10 shallots, peeled and thinly sliced
             1 celery stalk, diced

             1 sprig of thyme
             4 small ripe tomatoes, diced
             1 bottle (750ml) red wine (preferably a Bordeaux blend)
             100ml reduced beef stock
             40g butter, chilled
